RAMEN NOODLE STIRY FRY
Prep Time: 10 min. Bake Time: 20 min. Yield: 4 servings
Ingredients:
- 1 lb. chicken, trimmed and cubed
- 1 Tb. vegetable oil
- 1 tsp. lemon pepper seasoning
- 4 cups sliced vegetables (broccoli, cauliflower, carrots, zuchinni, yellow squash, mushrooms, peppers, sugar peas, etc.)
- 2 packages ramen noodles
- 1 cup water
Instructions:
- Cook chicken in oil on medium high heat. Season with lemon pepper seasoning.
- Add vegetables to the pan and stir fry for 5 min.
- Break up ramen noodles and pour into pan with water. Add one of the seasoning packets from the noodles.
- Turn heat to low. Cover and steam for 5-10 minutes; stir well. If needed, add more seasoning from the other noodle seasoning packet.
